Avocado Chickpea Salad Sandwich with HIPPEAS® Organic Chickpea Puffs

Ingredients

½ ripe organic avocado
½ can organic chickpeas, rinsed
1 organic lemon wedge
Organic lettuce
Organic tomato
2 slices of your favorite bread
Salt and pepper to taste
Trader Joe's Everything but the Bagel Seasoning (optional)
HIPPEAS Organic Chickpea Puffs

Directions

1. In a medium bowl add your avocado and chickpeas. Mash with a fork until you get your desired texture.
2. Add salt and pepper to taste then squeeze in the juice from your lemon. Mix until just combined.
3. Take 2 slices of your favorite bread (a wrap works too!) and add your “avocado chickpea salad.” Sprinkle on the Everything but the Bagel Seasoning, yum!
4. Add lettuce and a big slice of tomato to top off your sandwich.
5. Grab your favorite HIPPEAS Organic Chickpea Puffs and enjoy!
