She loves making food from and inspired by other cultures and you’ll find her regularly geeking out about the science behind the food she cooks!Check out Eva’s blog for more recipes! https://www.thecuriouschickpea.com/Vegan Crunch Wrap w/ HIPPEAS® Jalapeño Vegan Cheddar Tortilla ChipsIngredients 2 large (burrito-sized) flour tortilla ½ cup refried beans – you can buy canned vegan refried beans at most grocery stores ½ cup vegan cheese-style shreds of your choice ½ cup chopped tomatoes ½ cup chopped Romaine lettuce Avocado Oil HIPPEAS® Jalapeño Vegan Cheddar Tortilla Chips Directions To make your vegan crunch wraps, take a large flour tortilla, warm it up, then spread some refried beans in the center of the tortilla, leaving about 2 inches of tortilla uncovered around the edge. Add some vegan cheese, then layer on HIPPEAS® Jalapeño Vegan Cheddar Tortilla Chips. Now you’re going to fold up the outer edges of your crunch wrap to cover the filling. Place a small cut tortilla circle on top of your filling (you can cut it yourself or use taco sized flour tortillas), then fold the edges of the tortilla around to cover. Heat a skillet over medium and add some avocado oil. Fry the folded side down first, then flip and cook on the second side. Cook until both sides are golden, about 4 minutes each side.To Serve Enjoy warm with your choice of guacamole, salsa, and/or hot sauce!
